1/4 c. olive oil
8 tomatoes, halved across - large, ripe, firm
salt and fresh ground pepper
1/4 c. parsley - chopped, fresh
2 tsp. oregano - chopped, fresh
4 cloves garlic - minced
1 1/2 c. breadcrumbs (add more if needed)

Directions:
Directions:
1. Preheat oven to 400. In large skillet, heat oil over medium-high heat. Add tomatoes, cut side down, to the skillet in batches and sear them for about 3 to 4 minutes. Don't move them around.
2. Transfer tomatoes, cooked side up, to baking dish large enough to fit them in one layer.
3. In mixing bowl, combine salt, pepper, parsley, oregano, garlic and 1 cup of the breadcrumbs. Toss to mix well. Add the remaining breadcrumbs to the bowl if necessary. Top the tomatoes with this mixture, pressing into place.
4. Drizzle any pan juices over tomatoes and bake, uncovered, until topping is golden brown, about 15 to 20 minutes, watching to make sure the topping doesn't brown too quickly.

*Serve immediately. Grate some parmesan on top or mozzarella if desired. I usually use the Italian seasoned breadcrumbs, or you can crush croutons for more flavour.

These luscious tomatoes are good paired with grilled sausages, roast chicken or beef.

Choose beefsteak tomatoes if available.
