1 1/4 c flour
1 T baking powder
1/2 tsp salt
1 1/2 cups Kellogg all bran cereal
1/2 c sugar
1 large egg
1/3 c shortening or vegetable oil

Directions:
Directions:
Sift together flour, baking powder, salt and sugar. Set aside. Measure cereal and milk into large mixing bowl. Stir to combine. Let stand 1 to 2 minutes or until cereal is softened. Add egg and shortening. Beat well. Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups.
Bake at 400 degrees for about 25 minutes or very lightly browned.

Variations: 3 cups Kellogg raisin bran
