2 1/2 lb cubed potatoes 2 green peppers cut into pieces 2 cloves garlic, minced 2 sweet onions chopped 2 T. fresh rosemary 1/2 c. olive oil 1/2 tsp black pepper 1/2 tsp. salt
1. In large bowl combine the potatoes, red peppers, garlic, onions, green onions, oregano, marjoram, rosemary, olive oil, pepper and salt. Mix well. 2. Line a broiler pan with aluminum foil and oil lightly. Distribute the potato mix evenly in the pan. 3. Bake in a preheated 375 degree oven for 40 minutes, stirring gently twice during that period.
