4 Swordfish Steaks
Olive oil
Dijon Mustard
1/4 Cup Feta
Medium tomato
Lemon juice
Small green onion
Oregano
Fresh dill, if possible

Directions:
Directions:
Mix 1/4 cup Dijon mustard, 1/4 cup extra virgin olive oil, 1 tsp. ground oregano together: coat swordfish steaks

Grill until done. Serve with Relish on top.

Relish:
1 medium tomato, chopped, 1 small scallion, chopped, 1 1/2 oz. feta, crumbled, 1 TBL fresh lemon juice, 3 TBLs fresh dill, 1/4 cup olive oil, mixed together.

Swordfish is a very meaty, but mild fish. Serve with a green salad, crusty bread, good wine and you're all set. Excellent on the grill. Made this for Kirsten's birthday one year and she felt it rivaled anything we could have had in a very fine restaurant.
