1 1/2 lb. of round or rump beef (1 1/2"-2" thick)
1/4 cup flour
1 t. salt
1/8 t. pepper
2 T. vegetable oil
1 1/2 cup canned tomatoes
3 large peeled onions, sliced
1 stalk celery, diced
1 garlic clove, minced
1 T. A-1 Steak Sauce

Preparation Time: 30 minutes

Trim any excess fat. Combine flour, salt and pepper, and with the edge of a saucer, pound 1/2 of flour mixture into one side of beef. Turn beef over and pound remaining flour into other side. Heat oil in a heavy skillet and when oil is very hot, brown beef in it very quickly on both sides. Add the rest of ingredients, cover and bake in slow oven at 300 for 2- 2 1/2 hours or until tender. Uncover for last half hour in order that sauce may cook down to a rich thickness. Serve on platter with sauce over and around it.
