Pork Loin (whatever size)
salt and pepper (however much you need)
sauerkraut
Cream potatoes

Directions:
Directions:
Rub loin liberally with salt and pepper. Place in a baking dish and bake at 400, uncovered, for about 20 minutes. Turn heat down to 350 and cover with a lid or foil. 20 minutes before removing from oven, uncover and pour sauerkraut over and around the loin. Recover for remaining time. Remove from oven and let rest 15 minutes before slicing. Spoon kraut over potatoes with pan drippings.

I cooked this on New Years Day (with black eye peas too). Goodness knows the fat isn't exactly healthy, but once a year it's worth it.
