8 potatoes (roughly 4 lbs)
1 lb American cheese, sliced in strips
1 cup mayonnaise
1/2 cup chopped onion
1 tsp salt
1/2 tsp black pepper, or to taste
1/2 lb bacon
1/4 cup sliced stuffed olives, optional

Directions:
Directions:
Preheat oven to 325F. Boil the potatoes. While the potatoes are cooking, chop the bacon and cook over medium heat until about half done - most of the fat cooked out but not browned. Place bacon on paper towels to drain. Let the potatoes cool slightly and then peel and dice them. Combine the potatoes, cheese, mayonnaise, chopped onion, salt and pepper and mix well. Spread evenly in a 9" x 13" pan. Sprinkle with the bacon and olives. Bake in preheated oven for 1 hour. 8-1 servings
