Ingredients:  
3 cups thinly sliced zucchini (1 large, 1 small)
4 eggs slightly beaten
1 cup grated Parmesan cheese
1/2 cup olive oil
parsley (1 tsp. or so)
1/2 tsp. oregano
salt and pepper to taste
1 cup bisquick
1/2 cup chopped onion
1 clove garlic, chopped

Directions:

Mix all together and pour into greased 9 by 13 pan. Bake at 350 degrees for 20 to 25 minutes until golden brown on top. Cut into squares.
