1 T. oil
1 onion, chopped
2 cloves garlic, chopped
1 large red pepper, diced
1 qt. chicken stock
1/3 c. fresh lime juice, or 1/4 c. lemon juice
1 boneless cooked chicken breast, shredded
1 c. cooked rice
1 c. chopped tomatoes
1/2 c. chopped fresh cilantro
salt and pepper
Chopped fresh cilantro for garnish

Chopped jalapeņos

Directions:
Directions:
Heat oil and saute onion, garlic, pepper until soft. Add stock and bring to a boil. Add fresh lime, chicken meat and rice and bring to a boil. Add tomatoes and cilantro, then turn off heat. Add salt and pepper.
