1 c. corn meal
1 c. flour
1/2 tsp. salt
4 tsp. baking powder
1/2 c. sugar
2 eggs
1 c. milk
1/4 c. oil.
2 T. butter

Directions:
Directions:
Preheat over to 425F.

Melt 2 T. butter in baking pan.

Mix all ingredients, pour into pan and bake 20 - 25 minutes.

Personal Notes:
I sometimes use 1 1/2 c. corn meal and 1/2 c. flour. May reduce the oil in favor of the butter in the pan.
