1 1/2 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. baking powder
1/4 tsp. nutmeg
2 egg whites
1 c. sugar
1 c. ripe bananas, mashed
1/4 c. cooking oil
Salt
Non-stick spray coating
Chopped nuts if desired

Directions:

Stir together flour, baking soda, cinnamon, baking powder, nutmeg and a pinch of salt. In a large mixing bowl, beat together egg whites, sugar and banana. Add oil and mix well. Stir flour mixture into banana mixture. Add nuts if desired. Spray an 8x4x2" loaf pan with cooking oil. Transfer batter into prepared pan. Bake in a 350 oven for 55-60 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack.
