6 potatoes, peeled and quartered
1 cup sour cream
1 can cream of chicken soup
1/4 tsp. pepper
1/4 tsp. curry powder
4 hard boiled eggs, diced
1/2 c. bread crumbs
1/2 c. sharp cheddar cheese, shredded

Directions:
Directions:
Boil potatoes until tender then cut into small cubes.
Mix soup, pepper, and curry powder in bowl.
Coat casserole with cooking spray.
Layer 1/2 potatoes, 1/2 eggs, 1/2 soup mixture, repeat layers.
Mix bread crumbs and cheese and sprinkle over casserole.
Bake at 350 for 30 minutes.

I tried this recipe when I was suffering through endless dental work. This was in a cook book called the No-chew cookbook by J. Randy Wilson. It turned out to be good and, of course, easy to eat, braces and all.
