3 - 4 tbsp. butter
2 (15.25. oz.) cans creamed corn
2 eggs, beaten
1 (8 oz.) pkg. dry corn bread mix
1 onion, finely chopped
1 green pepper, finely chopped
1 c. frozen corn (optional)
salt and pepper to taste

Directions:

Preheat oven to 350
Prepare casserole dish with cooking spray.
Melt butter in fry pan and saute onion and pepper, about 5 minutes.
Mix together corn, eggs, corn bread mix, salt and pepper. Add sauteed vegetables.
Transfer all to casserole dish.
Cover dish with foil and bake in preheated oven for about 40-50 minutes or until firm.

This is one of our favorites. Easy to make and tasty. I use Jiffy corn muffin mix and usually make 1/2 the recipe.
Remove the foil near the end of the cooking time for a browner casserole.
