2/3 c.butter or margarine
2/3 c. all-purpose flour
7 c. milk
6 potatoes (cubed, cooked, and drained)
(or 3 large baking potatoes)
1 large onion (diced)
(or 4 green onions sliced)
12 bacon strips
(or 1 pkg. Real Bacon bits)
1 1/4 c. shredded cheddar cheese
3/4 T. salt
1/2 T. pepper

Directions:

Melt butter/margarine in a large saucepan. When melted, add all-purpose flour. Stir until the flour and butter form a "pasty" texture. Add 7 cups of milk (one cup at a time making sure mixture is thick before adding next cup). Add drained potatoes, onions, bacon and bring to boil. STIR CONSTANTLY! Reduce heat and add shredded cheese. Simmer 10 minutes. Add salt and pepper and remove from heat. Soup will continue to thicken. Add small amount of water before serving.
