Large Head of Cabbage, or enough for 25 leaves ( Boil cabbage in salt water until tender , cool, and remove the leaves).
2 1/2 tsp. salt
3/4 c. onions
1/2 c. chopped sweet green pepper
1/2 lb. pork sausage ( I use the hot Jimmy Dean pork sausage).
1 small can of diced petite tomatoes
1 c. rice Whole grain or Minute rice (uncooked)
1 can of sour kraut
1 large can of tomato juice or v8 juice ( I like v8 ).
1 tsp. pepper
1 tsp. salt
1/2 tsp. Italian seasoning ( any seasoning you may like).
2 lb. ground beef

Directions:
Directions:
Combine rice, onions, pepper, beef, eggs, tomatoes, salt, pepper and Italian seasoning. Roll 1/2 cup approximately (depending on leaf size) of meat mixture in leaves holding leaf together with a tooth pick. Place sour kraut in bottom of kettle and lay cabbage leaves on top. Pour tomato juice or V8 juice over cabbage. ( you can add a little water to juice). Cook on medium heat until done (around two hours).

This was a staple at weddings. Add this to polkas, accordion music and the chicken dance, you had a perfect wedding reception and if it was an affair on the Mitchell side you can be sure Aunt Mary Jennings would be the one playing the accordion.
