"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Cranberry Feta Pinwheels, by Terri Anderson, is from The ASC Family Cookbook Project,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 package dried sweetened cranberries 1 (250 g) container of cream cheese spread 1 c. crumbled feta cheese 1/4 c. chopped green onion 4 large flour tortillas (may use wheat or spinach)
Combine all ingredients except tortillas, mix well. Divide and spread the mixture evenly among tortillas. Roll up tightly, wrap in plastic and refrigerate at least one hour. To serve, cut into 12 slices.
A nice variation is to add thin slices of ham on top of the spread before rolling. Using the spinach tortilla adds a festive look for Christmas.
