boneless, skinless chicken breasts
Italian salad dressing
fresh jalapeņo peppers
Monterey jack cheese, not shredded
bacon

Directions:
Directions:
For each serving you will need a chicken breast, a whole jalapeņo, a piece of pepper sized cheese and a slice of bacon.
Marinate the chicken in the dressing overnight or for several hours. Butterfly the peppers and remove the seeds. Cook the peppers in the microwave on a paper plate for a minute or two or until they are just slightly softened. Cut the cheese into pieces that will fit inside the peppers and place the cheese in the freezer. This will prevent it from melting too quickly on the grill and oozing out. To assemble, cut a pocket in each chicken breast. Put the cheese inside the jalapeņo and stuff the pepper inside the chicken breast. Wrap each breast with a slice of bacon. Use toothpicks to secure as needed. Grill over medium coals until the chicken is cooked thoroughly.
