1/3 c. sugar
3 T. tapioca
2 -3/4 c. milk
1 egg well beaten
1 tsp. vanilla

Directions:
Directions:
Mix sugar, tapioca, milk and egg in medium saucepan; let stand for 5 minutes. Cook on medium heat, stirring constantly until mixture comes to a full boil. Pudding will thicken as it cools. Remove from heat. Add vanilla.
Cool for 20 minutes; stir. Serve warm or chilled.

For chocolate tapioca, increase sugar to 1/2 c. and milk to 3 cups. Add 3 squares of semi-sweet baking chocolate to saucepan before cooking.
