1/2 c. water
2 c. self-rising flour
1 tsp. pepper
one 1 to 2-1/2 lb. frying chicken, cut into 10 pieces
Vegetable shortening for frying

Directions:
Directions:
Beat eggs with water. Add black pepper to flour. Dip seasoned chicken in egg/water wash; coat with flour mixture. Melt shortening and fry chicken at moderate heat (350F) until brown and crisp. Dark meat requires about 13 to 14 minutes and white meat about 8 to 10 minutes cooking time.

I always season the chicken with salt, pepper, garlic powder, onion powder and cayenne pepper, and return it to the refrigerator for awhile. The longer it sits (not more than 3 hours), the more flavorful it will be when frying. Always use small chickens. A Dutch oven works best for frying, but a cast iron skillet works too. Do not fill the pot or pan more tan half full of melted shortening.
