1 1/2 pounds ground beef
1 yellow onion, chopped
1 (15-oz) can chili without beans
1 (15-oz) can tomatoes with green chilies, drained
1 to 2 (15-oz) cans pinto beans, drained and rinsed
1 pound hot or mild Mexican Velveeta cheese, cut into cubes
2 cups sour cream

Directions:
Directions:
Brown the ground beef with the onion in a large skillet, stirring until the ground beef is crumbly; drain. Add the chili, stewed tomatoes, tomatoes with green chilies, beans, cheese and sour cream and mix well. Simmer over low heat for 30 minutes. Ladle into soup bowls. Serve with corn chips.
