4 chicken breasts, cubed
1 12 oz pkg. fresh mushrooms, sliced
1 1/2 cup marsala wine
1/4 cup vegetable oil
3 chicken bouillon cubes
1 stick margarine
1 tsp parsley; salt and pepper to taste
1 tsp oregano
2 garlic cloves, pressed or diced fine

also needed to serve: 10 oz linguine , Romano cheese.

Directions:
Directions:
Place the chicken in a large pan to cook, add the vegetable oil and margarine. Add the rest of the ingredients (except the mushrooms which should be added the last 15 minutes) ) and simmer for 40-45 minutes. While this is cooking, boil 10 oz of linguine until done; drain. Serve chicken mixture over top. May add Romano cheese to serve.

This recipe was given to me by a friend I met when we lived in New Hampshire. I often substitute another white wine and it turns out great.
