2 Racks of Lamb
1/4 c fresh oregano, chopped
1/4 c fresh rosemary, chopped
1/4 c fresh thyme, chopped
2-3 garlic cloves, minced
1/2 c olive oil
2 T Dijon mustard
salt and pepper to taste

Directions:
Directions:
Preheat oven to 450
In a food processor or bowl, mix all the herbs, garlic and breadcrumbs with just enough olive oil to combine but not too mushy. In a large skillet heat olive oil and brown lamb on all sides. Place lamb on an oiled baking sheet and brush mustard on all sides. Coat with the breadcrumb mixture.
Bake about 10 minutes or until the internal temperature reaches 120. Let rest for 10 minutes before slicing between bones.
