1/2 c. olive oil, divided
1 medium onion, chopped
6 cloves garlic, mince and divide
2 cans (14 1/2 oz.) Italian ready cut peeled tomatoes
1/4 c. tomato paste
2 tbsp. chopped fresh basil
salt & freshly ground pepper
2 eggplants (1 lb each) cut into 1/2" thick slices
1 lb. mushrooms, sliced
1 box. (10 oz.) chopped, frozen spinach, thawed & sqeezed dry
1 c. chopped prepared roasted red bell peppers
1 lb. mozzarella cheese, sliced
2 c. (8 oz.) grated dry jack cheese
2 tbsp. chopped fresh italian parsley

Preheat oven to 350 F.

Sauce: In a medium saucepan, heat 2 tbsp. oil over medium heat. Add onion and saute, stirring occasionally, for 3 minutes. Add 3 cloves garlic; saute, stirring occasionally, for 2 minutes. Stir in tomatoes and paste; bring to a boil, cover and simmer for 30 minutes. Stir in basil and season with salt & pepper. Set aside.

Eggplant: Brush eggplant slices with 1/4 c. oil. Place on baking sheets; bake for 20 minutes; set aside. Raise oven temperature to 375F.

Mushroom/Spinach Mixture: In large skillet, heat remaining 2 tbsp. oil over medium heat. Add mushrooms, saute, stirring occasionally for 6 minutes. Add spinach, bell peppers and remaining 3 cloves garlic; saute, stirring ocasionally for 2 minutes. Season with salt & pepper. Set aside.

Construction: Spread 1 c. of sauce on bottom of 9" x 13" baking pan. Top with 1/2 of eggplant slices, 1 1/2 c. sauce, 1/2 of mushroom/spinach mixture, 1/2 lb. mozzarella & 1 c. jack cheese. Repeat layers. Bake for 30 minutes until hot & cheeses are melted & bubbly. Sprinkle with parsley.
