1 lb. fresh or frozen tortellini
2 T. olive oil
1/2 c. onion chopped
3 cloves garlic, minced
1 pkg. spinach (fresh is best)
1 c. tomato cubed
1/4 c. fresh basil, chopped - OR -
1.5 tsp. dried basil
1/2 tsp. salt
1/2 tsp. pepper
1 c. whipping cream
1/4 c. Parmesan cheese, grated
1/2 tsp. red pepper flakes (optional, if you like it spicy)
chicken breast, cooked, cubed (optional)

Directions:
Cook tortellini according to package directions; drain. Meanwhile, heat oil in a large skillet. When hot, add onion and garlic; cook until brown and tender, about 4 minutes. Add spinach, tomato, basil, salt & pepper and pepper flakes. Cook 5 minutes. Stir in whipping cream and Parmesan cheese. Cook until just boiling. Reduce heat to low, add tortellini and chicken breast. Cook additional 4-5 minutes. Serve topped with more Parmesan cheese, if desired
