1 lb. sweet potatoes
1/2 c. brown sugar, packed
1 c. orange juice
1 tbsp. orange peel
1 tsp. pumpkin pie spice
1/3 c. sherry (optional)
2 tbsp. butter

Directions:
Directions:
Boil potatoes in salted water 30 minutes or until almost tender. Drain; peel and cut into serving-size pieces.
Place potatoes in shallow 1-1/2 qt. baking dish, combine remaining ingredients and bring to a boil, stirring; boil 3 minutes. Pour over potatoes. Bake in 350 oven 1 hour, basting often to glaze well.
