1 deep dish pie crust (preferably in a quiche pan)
2 cups grated mozzarella cheese
1 sweet onion, sliced and sautéed until tender crisp
2 large tomatoes, cut in two, sliced and drained
1/4 Parmesan cheese
1/2 cup buttermilk or sour cream
1/2 cup mayonnaise
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup fresh basil

Directions:
Directions:
Preheat oven to 350 degrees. Bake crust for 6-7 minutes until lightly browned. Remove from oven and sprinkle with 3/4 cup mozzarella. Drain sliced tomatoes on a paper towel, then layer half in the crust, add the onions, then the rest of the tomatoes. Sprinkle with 1/2 cup mozzarella. Mix together buttermilk or sour cream, mayonnaise, salt and pepper, basil and Parmesan. Spread on top of pie, top with remaining cheese and bake for 30 minutes at 350º.
