1 egg
2 lbs. chicken parts
1/2 c. Italian flavored bread crumbs
2 T. shortening
1 can tomato soup
1/4 c. water
1/4 c. chopped onion (optional)
1/2 tsp. each (crushed): garlic, oregano leaves & basil
1 c. shredded mozzarella cheese (cover each piece of chicken)

Directions:
Directions:
Beat egg and water. Roll chicken in egg mixture, then bread crumbs. Brown chicken in oil and pour off fat. Stir in soup, 1/2 c. water, onion, and other seasonings. Cover and cook over low heat for 45 minutes or until done. Stir occasionally. Sprinkle with cheese and heat until it melts. Serve with grated parmesan cheese.
