4-6 boneless, skinless chicken breasts
3 apples, cored, chopped, (not peeled); dice 3/4 c.
c. shredded Cheddar cheese
2 T. Italian-style dried bread crumbs
c. white wine
c. chicken broth
c. brown sugar, divided
Cinnamon
Curry powder
Onion powder
Thyme
Seasoned salt
Pepper
Olive oil

Directions:
Directions:
Combine c. of diced apples, cheese, bread crumbs, 2-3 T. brown sugar, 1 tsp. cinnamon, 1 tsp. curry powder, small amount of onion powder, thyme, seasoned salt and pepper. Season rest of the apples with brown sugar and the other seasonings. Flatten chicken breasts to about " thick. Divide apple mixture between chicken breasts, and roll up each breast. Secure with toothpicks. Heat oil in a skillet with a lid. Brown stuffed breasts and add wine and broth. Cover and simmer about 10 minutes, and then add the rest of the apples. Cover and continue simmering about 10 more minutes until apples are cooked and chicken is done. Transfer chicken and apples to serving platter. Add another T. of brown sugar to the pan and stir the sauce over high heat till it thickens. Serve chicken and apples with sauce.
