3 lbs round red potatoes, peeled and quartered
1/2 c. butter or margarine
2 (3 oz.) pkgs. cream cheese, softened
1 c. (4 oz.) shredded cheddar cheese, divided
3/4 c. finely chopped green pepper
3/4 c. finely chopped green onions
1 (2 oz) jar diced pimento, drained
1/2 c. grated Parmesan cheese
1/2 c. milk
1 tsp. salt

Directions:

Cook potato in boiling salted water to cover 15 minutes or until tender, drain and mash. Add butter and cream cheese, beat at medium speed with an electric mixer until smooth. Stir in 1/2 c.cheddar cheese, green pepper, and remaining 5 ingredients.
Spoon mixture into a lightly greased 11x7 inch baking dish. Cover and refrigerate up to 24 hours, if desired. Remove from refrigerator, let stand covered, 30 minutes. Uncover and bake at 350 for 25 - 30 minutes or until thoroughly heated. Sprinkle with remaining 1/2 c. cheddar cheese; bake 5 more minutes or until cheese melts.

This was on Libbo's '02 Thanksgiving menu that we made. She found this great recipe from Southern Living. It turned out to be real good and very festive looking. This is now a favorite at Ogletree Thanksgiving and Christmas gatherings!
