4 large tomatoes
1/2 lb. fresh grated mozzarella
1/4 c. chopped fresh basil
1/4 c. chopped fresh parsley
1/4 c. chopped fresh chives
1/2 c. black olives, sliced
freshly ground pepper

1 T. Dijon Mustard
4 T. red wine vinegar
1 t. sugar
1/2 t. sugar
1/2 t. salt
1/2 t. fresh ground pepper
minced parsley and/or fresh snipped chives to taste
1/2 c. olive oil

Serves: 8-10
Preparation Time: 30 min.

Layer tomatoes in 9" x 13" casserole. Sprinkle remaining ingredients over all. Drizzle vinaigrette over salad and grind black pepper over all. You can also slice fresh mozzarella and alternate tomatoes/cheese on a round dish.
