"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1/3 C. flour 1 C. brown sugar 1/4 tsp. salt 2 C. hot milk 3 beaten egg yolks 3 T. butter 1 tsp. vanilla 1 baked pie shell 3 egg whites for meringue
Mix flour, sugar and salt. Gradually add hot milk, cook until thick. (I do this in the microwave) Add small amount to beaten egg yolks. Return to mixture and cook 2 more minutes. Cool slightly, add butter and vanilla. Pour into baked pie shell and cover with meringue. Bake 12 to 15 minutes in 350º oven. Meringue: Mix 1/2 C. sugar with 1 T. cornstarch. Slowly add 1/2 C. water. Cook in microwave until thick. Cool completely. Beat egg whites until very stiff but not dry. Gradually beat in the cooked mixture. Beat until glossy peaks hold. Bake at 350º until golden.
