1 cup whole wheat flour
1/2 cup flour
3/4 cup sugar
1/2 cup oat bran
1/2 tsp salt
2 tsp baking soda
3 eggs
1/4 cup oil
2 tsp vanilla
3/4 cup apple sauce
1/4 cup molasses
1/4 tsp orange extract
2 cups grated carrots
1/2 cup raisins
1/2 cup walnuts
1/2 cup flaked coconut
1 medium tart apple peeled and finely chopped

Directions:
Directions:
In a bowl combine dry ingredients. In another bowl combine eggs, applesauce, oil, molasses and extracts. Mix well. Stir into the dry ingredients until moistened. Fold in carrots, raisins, walnuts, coconut and apples. Fill greased muffin tins 3/4 full. Bake at 350 for 25-30 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan.
