1 cup oil
2 eggs
2 tsp baking soda
4 cups flour
1 tsp salt
2 cups brown sugar
2 cups soured milk
2 tsp baking powder
2 cups oatmeal
2 tsp vanilla

Directions:
Directions:
Cream butter, sugar and eggs. Add vanilla. Soak oatmeal in soured milk in a separate bowl. Mix dry ingredients with butter mixture. Add oatmeal mixture and only mix until moistened. Spoon into greased muffin tins. Bake at 350 until golden brown. Do not overbake. Makes 12 large muffins. For variation try adding fruit or chocolate chips.
