2 (15 oz.) cans black beans, drained
2 green bell peppers, chopped (if they are large, one will do)
1 or 2 tomatoes cut into chunks
1 red onion, finely chopped
1/3 C. olive oil
1 T. lime juice
2 t. chopped parsley
1 t. salt
1/2 t. red pepper flakes

Directions:
Directions:
Combine black beans, green peppers, tomato and onion in a bowl, stirring gently to mix. Mix olive oil, lime juice, parsley, salt and red pepper flakes and fold into the bean mixture, tossing to coat. Marinate, covered, in the refrigerator for 6 hours or longer, stirring 2 or 3 times. Serve with tortilla chips . . . I like baked Tostitos scoops with it.
