2 eggs, well beaten 1 1/2 Tbsp flour 1 tsp salt 1/8 tsp baking powder 1/2 tsp grated onion 3 cups raw potatoes, peeled and finely shredded
In a mixing bowl, gently combine potatoes and eggs. Combine dry ingredients and onion. Stir into potato mixture. Drop by tablespoon onto a preheated skillet. Brown lightly on both sides. Makes twelve 2" pancakes.
