1 1/4 cups all purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
1 cup (3 medium) pureed ripe bananas
2 eggs
1/2 cup corn oil
1/3 cup sugar
1 cup quick cooking oats
1 teaspoon vanilla
1/2 cup chopped walnuts

Mix flour, baking powder, salt and cinnamon on sheet of wax paper. In separate bowl beat together until blended: banana, eggs oil and sugar. When well-mixed, add flour mixture; stir just until dry ingredients are moistened. Stir in oats and nuts. Pour into an oiled 8x4x2 1/2-inch loaf pan. Bake at 350 for 55 minutes. Remove from oven and cool on rack for 10 minutes.
