6 bacon strips 6 cups frozen cubed hash browns 3/4 cup chopped green pepper 1/2 cup chopped onion 1 tsp salt 1/4 tsp pepper 6 eggs 1/2 cup shredded cheddar
Cook bacon and remove to bowl. Fry rest of the ingredients (except cheese) for 2 minutes. Cover for 15 minutes until potatoes are browned and tender. Make 6 wells in the potatoes and break an egg into each. Cover and cook for 8 minutes. Sprinkle with cheese and bacon. Serve.
