1/2 cup shortening
1/2 cup butter
1 cup brown sugar
1/2 cup milk
2 cups quick cooking oats
1 3/4 cups sifted flour
1 Tbsp baking powder
1/2 tsp salt


3 cups pitted dates
2/3 cup water
1/2 cup sugar
1 tsp lemon juice (opt)

Cream shortening and butter. Gradually add brown sugar, creaming until very light. Add milk and mix. Add quick cooking oats and mix. To sifted flour, add baking powder and salt and sift again. Add first mixture. Dough should be very soft. Chill dough thoroughly. On floured board roll out to about 1/4" thickness. Cut out with round cookie cutter. Place on well greased cookie sheet and bake. When cooled put cookies together with filling. Filling: Combine pitted dates, water and sugar. Cook until thick, stirring well. Cool and add lemon juice.
