21/2 cups (1 lb) dried navy beans
8 cups water
meaty ham hocks (left over from whole ham roast
2-3 med potatoes peeled and cubed
2 -3 med carrots, peeled & chopped
1-2 stalks of celery, chopped
3/4 tsp thyme
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
Rinse beans. Combine beans & water. Bring to boil and then reduce heat simmer for 10 minutes. Add ham hocks Cover and simmer 1-2 hours until beans are tender. Remove hocks and take meat off and return the meat to beans. Add potatoes, carrots, celery and onions, thyme, salt, & pepper. Cover and simmer 30 minutes until vegetables are tender. Season to taste.
