7 lb. butterfly leg of lamb
3 cups red wine (Gallo Hearty Burgundy or other)
1/2 cup olive oil
2 onions & 2 carrots, thinly sliced
6 stems parsley
1 tbsp. thyme
2 bay leaves, crumbled
2 garlic cloves
2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Mix wine, olive oil and other ingredients. Add lamb and cover in airtight container. Refrigerate two days.Baste occasionally with marinade. Take out and pat dry. Use the marinade for basting. Grill outside 10 minutes on each side for medium rare, longer if you prefer it more done. Use a basket outdoors to keep the meat from curling. Or broil in the oven 3 inches from the top.
