This recipe for Peanut Brittle, by Loree Salvo, is from The ASC Family Cookbook Project,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 c. raw peanuts 1 c. white sugar 1 c. white syrup 1 tsp soda
Boil the peanuts, sugar and syrup over medium heat using a thick/heavy pan. Heat until it reaches a caramel color. Remove from heat and immediately add 1 tsp soda and stir. It will foam up when you put soda in. Quickly pour over a buttered cookie sheet. Let cool and break into pieces. Don't double this recipe.
