1 1/2 C dry Farfalle Pasta (can substitute pasta type)
2 C fresh Spinach (amount may vary to your liking)
1/2 C shredded Carrots
3 T Olive Oil
3/4 tsp Soy Sauce
1 T and 1/2 tsp Red Wine Vinegar
3/4 tsp minced Garlic
2 T Lemon Juice
Salt and Pepper to taste
2 T shredded Parmesean Cheese (good quality)
6 oz pckg Salmon

Directions:
Directions:
Cook pasta according to package directions; drain. Combine olive oil, soy sauce, vinegar, garlic, lemon juice, s&p. Shake vigorously to make the dressing. Wash and dry spinach. Combine pasta, salmon, and vegetables in bowl. Pour dressing over ingredients in bowl and mix thoroughly. Add cheese and mix in. For best flavor let sit over night.

Use your imagination on this. If you like black olives, they would go well. I add mushrooms, and cherry tomatoes. The amount of spinach is also variable.
