1 8 oz. pkg. cream cheese, softened
1 cup sugar
2 cups crushed pineapple and juice
1- 3 1/2 oz. can coconut
1- 9 oz. carton Cool Whip
1 cup pecans
1 baked pie crust or graham cracker crust

Directions:
Directions:
Cream cheese and sugar together. Add pineapple and juice, nuts and coconut. Fold in Cool Whip. Put in baked pie crust or graham cracker crust and set in refrigerator for 2-3 hours.

I made the pies a lot in the summertime because they were always good and cold. My Mama (Betty Sirmon Davis) loved them with walnuts instead of pecans--so I made one of each.
