2 lg. eggs (lightly beaten)
4 oz. (1/2 cup) sour cream
1 8 oz. cream corn
2 med. jalapeno, chopped
2 1/4 cup self-rising cornmeal
1/4 cup diced onion
1/4 cup diced red pepper
2 T. sugar
1 cup cheddar cheese

Directions:

Preheat oven 425 degrees. Add 1 T. oil to cast iron skillet. Preheat skillet in oven. Blend eggs, sour cream, corn, onions, peppers in lg. bowl. Add cornmeal mix and sugar. Stir just until moistened. Mixture will be thick. Pour into preheated skillet. Bake for 20-25 mins.
