1 lb green split peas (2 1/2 c)
3 qts water
1 lb pork sausage
1 c diced celery
1 c diced potatoes
1 c minced onion
Salt & pepper to taste

Directions:
Directions:
Cook split peas for about 15 mins and pour off first water. To 3 qts fresh water add 1 t salt; stir peas into it along with sausage which has been made into 1-in balls and rolled in flour. Cook soup until sausage is well done.
Add diced celery, potatoes and onion at least 30 min. before serving.
This soup tastes best when cooked slowly for several hours.
