2 1/2 Qts water 1 pkg (9oz.) cheese tortellini 1 red pepper, seeded,cut into 1/2 in strips and then thirds 5 or 6 mushrooms,sliced 1/2 cup chopped celery 1/2 cup canned artichoke hearts,halved and drained 1/4 cup chopped parsley 1/4 cup copped basil leaves 1/2 cup sliced ripe olives salt and freshly ground pepper to taste

In Lg pot gently boil water cook tortellini until al dente,about 7 min. Drain well and transfer to a bowl. Combine with remaining ingredients. Toss with just enought dressing to coat about 1/4 c. Cover and refrigerate several hours or overnight. Add more dressing just before serving if needed. Use with Reed's Dressing(receipe to follow)
