Pesto:
1 bunch of basil
2 cloves of garlic
handful of pine nuts or walnuts
1/2 cup Parmesan cheese
olive oil

Pasta Salad:
1 box mini penne pasta
2T pesto
cucumber- quartered
grape/cherry tomatoes - quartered
turkey pepperoni
salt to taste

Directions:
Directions:
Pesto: (If making your own) combine a bunch of basil, 2 cloves of minced garlic and with a handful of walnuts or pine nuts finely blend in a food processor or blender. Add about 1/2 cup of parmesan cheese and turn back on and drizzle olive oil until it becomes a paste.

Cook noodles. Add about 2T of pesto (or more) and add cucumbers, tomatoes, and pepperoni. Garnish with more parmesan.
