1/2 c, shortening (Blue Bonnet Oleo)
2 egg yolks (beaten), save the whites for later
1 tsp vanilla
1 cup mashed bananas
1 tsp soda
1 1/2 cup sugar
1/4 cup buttermilk
1 2/3 cup flour
1/2 cup nuts optional

Directions:
Directions:
Cream sugar, shortening and vanilla. Add the yolks and buttermilk. Then add the dry ingredients.

Beat egg whites and add to the entire mixture. Fold in gently. Add the nuts if you like.

Bake at 350 for 45 minutes to an hour, depending what size pan you used.

The Best Banana bread, very moist and full of flavor. Small loaves make pretty Christmas party plates! Also a large round tin can can be used for baking. Makes it look very pretty.
