Long, firm, slim cucumbers, pared
Sweet onion or chopped green onion
1/2 c. sour cream
1 T. white vinegar
1 T. lemon juice
1 T. sugar
1/8 tsp. seasoned salt
freshly ground black pepper to taste or course ground seasoned pepper

Directions:
Directions:
Peel and cut the cucumbers crosswise in 1/8" slices. Drop into salted ice water for 1 hour. Drain well. Beat together sour cream, lemon juice, vinegar, sugar and seasonings. Slice or chop onions (or omit if you don't like them). Toss cucumbers, onions and dressing together. Chill.
Garnish with fresh parsley.

I use this basic recipe but often double it depending on how many cucumbers I am using.
Vidalia onions are great if you can get them in the spring.
