1 - 10 oz. package frozen spinach, thawed
2 T. butter
2 T. flour
1 c. milk
1/4 tsp. salt
freshly ground pepper, to taste
1 T. Parmesan cheese

Directions:
Directions:
Drain the spinach and press out the excess moisture. Melt the butter in a medium saucepan over medium heat. Stir in the flour to make a paste. Gradually add the milk; stir and cook until thickened. Add the spinach. Cook over low heat or for about 5 minutes until the spinach is tender, stirring constantly. Season with salt and pepper. Stir in the Parmesan cheese and serve.
